I don’t know if anyone has tried to make a canonical list of wine/food pairing theories. But in looking through some of the empirical studies I’ve seen over the past few years, it looks like there are about 8 distinct theories about why canonical flavor pairings work. It is worth collecting them in one place. 1. The structural-balance theory This is the most practical theory for sommeliers. pairings work when the major structural features of wine and food alter each other beneficially. The…
Part of my cookie series. This is for May. Read about the introduction and idea of this project in the inaugural post. I baked these for our IRANIAN DINNER & MOVIE NIGHT and they were specifically requested by V as her birthday cookie. I've done this flavor before but: it didn't turn out like I'd hoped I never documented it So here it is. May flavor of the month: MATCHA WHITE CHOCOLATE Trial #1 The Grinch that stole cookie The first time I baked these cookies was for Christmas 2025. What…
Assalamualaikum geng semua! Pernah dengar tentang komuniti HAM-JERANTUT? Justeru,…
June always feels like a little celebration in the kitchen, doesn’t it? The moment local strawberries arrive, everything suddenly tastes brighter, sweeter, and just a bit more special. Today I’m sharing a fun early‑summer treat that makes the very most of those gorgeous berries — Fresh Strawberry Waffles with Caramel and Strawberry Dips. Crisp on the outside, soft inside, and generously studded with juicy berries, these waffles are a delight whether you serve them for brunch, a weekend…
Nau maiYesterday we played at Kemba Live! in Columbus, Ohio. I composed a new breakfast: guac and chips on toast. The guacamole was simple with just an avocado, salt, lime juice, chopped tomato, and a bit of salsa which hopefully brought some diluted herb and spice flavours to this dish. On the side you can see strawberries and rasberries which bring a colour balance to the plating. From the bus: a chain link fence covered with privacy netting. The Scioto River. I’m sure I’ve taken this exact…
Pele Utu is a newish traditional tiki bar located near downtown Reno just north of I-80, sandwiched between the Gateway Inn and Taste of India restaurant. The venue previously served as the bar for the restaurant and had two entrances when the hotel had a medieval theme, but today has a single entrance that includes a little bridge from the foyer into the main room. The large winding bar fills the left side of the room with additional tables, booths, and a small stage for live performances. The…
Though the menu at Koffee Mameya can be innovative, they still serve high-quality coffees, such as this Panamanian Geisha roasted by Leaves.
This was my second time visiting Koffee Mameya Kakeru, which offers a tasting menu of coffee. They brew coffee in innovative ways, such as this clarified coffee milk drink. Each course has a small food pairing, such as crab in eggplant, aged sea bream, or coffee dashi with salted pork. This is not my style of coffee, but the work is innovative, and their inclusion in the World's Top 100 Coffee Shops ranking is justified.
Looking for Korean inspired cookies baked from scratch with quality ingredients that can be delivered to your doorstep? Well, I wasn’t when I got an ad on Instagram from Onue Bakery, but after seeing the ad I realized that was, in fact, something I definitely wanted in my life. I am slightly familiar with the concept of shipping fresh baked cookies, as I have ordered from Levain Bakery once before and received a pack of their dense, bakery style cookies. Levain’s website says they bake daily…
Another kind donation from James of Lakeside, California – thanks again! A day of being productive awaits me. TOFI not Tofu (the food). Read first about it in The Diabetes Code BMI is not a good predictor of T2 diabetes. A waist circumference is a better indicator. Visceral fat accumulates inside and around the intra-abdominal organs - like kidney, liver, etc. In contrast subcutaneous fat is fat deposited under the skin. Waist to heigh ratio should be less than half. So, for me waist should be under 89cms or 35 inches.
If you’re a lemon lover, this Three Ingredient Lemon Dessert is about to become your newest obsession. Made with just three simple ingredients — double cream, sugar, and fresh lemons — it’s one of the easiest and most elegant desserts you can whip up. The cream and sugar simmer together for only a few minutes before the lemon works its magic, transforming everything into a silky, luxurious pudding that chills to perfection. It’s bright, creamy, impressive enough for company, and yet so simple…
Looking for a place to grab lunch while walking around the neighbourhood of Kuramae, we came across Genraku Ramen. Now I’m not usually a big ramen person - partially because for some reason there’s always long lines outside the good ones. But we must have come at a good time, because we managed to slip in without having to wait at all. Although technically they serve your typical miso and shoyu ramens, Genraku’s specialty is how they fling rather a large amount of pork fat on top. And quite…

Daytripper is a new midtown Sacramento craft cocktail bar that focuses on agave and cane spirits in a Latin America themed setting. We’d heard great things and despite being open only a few weeks it seems like they’re already in prime form. The menu includes an array of classics from the Caipirinha, Pisco Sour, Paloma, and Ti’ Punch plus a variety of Margaritas, some originals, and NA options. We arrived a little before 6 pm on Saturday and had to wait for about 10 minutes in line to enter,…
It always surprises me how well watermelon, some salt, olive oil, and feta work together. Even without the feta it would be a delicious salad. Admittedly, there was a bit too much feta, but in this heatwave the watermelon is strictly rationed for another cool treat later in the day. Here’s the counterpart of the creamy Saucy Noods. I’ve only seen it once and that was at a liquidation style place so unsure if it still exists, but the creamy one was quite good so hopefully this is good and it is still around. Maruchan Saucy Noods Spicy Chicken Flavor Stir Fry Style Noodles – United States Detail of the packaging (click to enlarge). Contains chicken. To prepare, boil 1 1/3 cups water in a frying pan and cook noodle block for 5 minutes. Add in sachet contents. Finally stir and…
Shaped and themed cakes are awesome, of course, but I still drool and dream over more traditional wedding cakes, too. After all, they've come a long way from just simple tiers with flowers - even the simple tiers with flowers! (By Sweet Life Patisserie)Love this SO MUCH. And take a look at this amazing "fabric" pleating: (By Delectable by Su)Hard to believe those tufted pinwheels and embroidered borders are all sugar. It's so perfect! And check out the string work on this engagement beauty: (By…
What I love most about Kendra Vaculin’s Smoky Chicken and Avocado Kale Salad is that there’s no need to make a separate dressing! Ribbons of kale get massaged with avocado, lime juice, salt, and olive oil, which tenderizes the greens while coating them in just the right amount of fat and acid. From there, the kale gets piled onto a plate and topped with sliced roasted chicken that’s quickly marinated in chipotle chile and adobo, honey, cumin, and lime. Red onion wedges roast alongside the…

Porter is a dark beer, right? Pretty much black. Well, that was not always the case, as the late Martyn Cornell explains in his 2025 book Porter & Stout. He describes 18th century London porter as “mid-brown or deep chestnut in colour at most” and, on the same page, quotes a contemporary source which refers to porter as a “blood-red drink”. It’s always hard to understand how flavour and colour were perceived by people in the past but we do have Werner’s Nomenclature of Colours from 1814 which…
I can't believe that is is Sunday again as well as being the end of June! June has just whizzed by at the speed of light! On Sundays I like to share with you, my readers, my Meals of the Week. All of the deliciousness which I have enjoyed eating for my main meals over the past seven days! There's a whole lot of tasty going on here and a pleasure shared is a pleasure doubled!Generally speaking I live by myself, although I have had my daughter living with me since January. That is soon going to…
Honey Deuce, US Open – Flushing, New York The US Open has an official cocktail called the Honey Deuce. It started in 2006 and is made with vodka, lemonade, raspberry liqueur, and honeydew melon balls that resemble tennis balls. It can be considered an iconic drink like the Mint Julep at the Kentucky Derby. We got one to see what it was about. It tastes great, but you’ll pay for it. Last year, it cost $23 for the drink, although you can keep the souvenir cup. We kept the cup and have it in our…
I found every combination of World Cup country codes (e.g. CAN for Canada and MEX for Mexico would make CANMEX or MEXCAN etc.) and I could only find 4 English words: brasco (Brazil and Scotland) canned (Canada and Netherlands) tunned (Tunisia and Netherlands) turned (Turkey and Netherlands) In terms of whether those teams could meet in the competition: SCO vs. BRA kinda happened BUT Scotland was the designated home team so it technically didn’t count for BRASCO. CAN vs. NED would be in the…
sliced tomato + salted egg + fried eggplant with plain white rice i could eat a whole pot of rice with only that trio canned pineapple once in awhile... maybe once a month cherries i've always liked cherries.. also learned the darker the cherry the sweeter the fruit. same goes with strawberries, the darker the red, the sweeter it is. the lighter the red the sour or flavorless it is. also recently found out that chocolate makes my acne flare up.. i was never a huge fan of chocolate anyway...…
Delightful cortado to start the day at Youngblood Coffee in Fargo.
This this one came by way of James from Lakeside, CA – thanks! There are a lot of iterations of these noodles and this one I’ve not sampled. It’s cold outside today so shrimp sounds good. Let’s cook. Serviceberries are one of the finest wild berries I know of, and one of the most underappreciated. It exists in a duality: the fruit isn't widely eaten today, but it is the most culturally significant fruit I've discussed on this site, with more common names than any other. Also known as the juneberry, shadbush, saskatoon,... Read More The post Juneberries / Serviceberries / Saskatoon appeared first on Forager | Chef .
