I finally made my dish! I first learned of the Small Web Potluck via Aid's post. It was started by Skep, and this year, Myrtletribe is a co-host. This year, the theme is yellow, so I decided to make my favorite egg dish: Egg & tomato stir-fry with spring onions and lacy noodles BackgroundGrowing up, my mom made egg and tomato stir-fry as a side, which we ate with rice. Many years later, biang biang noodles started trending, and this is when I learned that in the Xi'an province in China, stir-fried egg and tomatoes are eaten with wide, thick, hand-pulled noodles. I had my first taste of it at Murger Han in London. I love noodles more than rice, so this was a match made in heaven. Recipe I made enough for 2 portions for dinner, plus another for today's lunch. Meaning 6 portions, total. I usually try to make this meal from the top of my head, but it never came out right. The tomatoes were always undercooked, the eggs too scrambled where even if I used six eggs, they just disappeared. So…
