Documenting my mishaps. In my efforts to cook once a week, I started thinking about what to make. Yesterday, I was craving a chicken casserole. The last time I ate this was during my childhood. Our neighbor, Micky, brought it over twice and it was the best thing I'd ever eaten. I still think about it from time to time. When I try to imagine Micky's casserole, I remember there was chicken, celery, and rice. You could cut a square of it and it was layered like a lasagna. But since I've never made a casserole, I decided to use a recipe. I was surprised that none have the carb included. When I searched what is usual eaten with casserole, suggestions said salad. I found this recipe by "Budget Bytes." (They had me at "budget.") I also chose this recipe because cream of chicken soup in a can isn't a thing in Switzerland.
