Irene Yoo’s Easy Ramen Carbonara with Kimchi, Bacon & Parmesan 0 ▲ Store-Bought Is Fine 1 hour ago · Food · hide We’re in full-on prep mode for Friendsgiving this weekend (Ayesha Nurdjaja-themed this year!), so we’re keeping dinners simple this week. Irene Yoo’s Ramen Carbonara was the perfect quick and satisfying meal! After crisping the bacon, you cook kimchi in the bacon fat until tender and caramelized around the edges. Then it’s as easy as cracking an egg into a pasta bowl, whisking it with Parmesan, and adding the hot, freshly cooked ramen noodles, bacon, and kimchi. You then toss until the sauce coats everything, before finishing with Parmesan, freshly ground black pepper, and sliced scallions. So much flavor for little effort is exactly the dinner we needed this week! This has become part of the regular rotation, since we nearly always have the ingredients on hand.
