This is a mac + cheese recipe I’ve been developing for a few years and I’m very happy with. I’m sure it’s not breaking new ground, but it’s a blend of techniques I’ve pulled from a bunch of other recipes I’ve tried. I use a blend of sharp cheddar, gruyere, parmesan, cubed mozzarella, and a small amount of blue cheese. The other secrets here are mustard powder and nutmeg! People I send this recipe to get frustrated because it doesn’t include many measurements so I’m sorry in advance. The number one tip I can give you is this: Nobody will be upset if the mac and cheese is too cheesy.
