Whenever there’s a little buttermilk left over, I know exactly what I’m making: Julia Turshen’s Olive Oil and Buttermilk Loaf from What Goes with What. It’s a go-to because almost no recipe uses the full bottle of buttermilk, leaving me with a strange amount left (this only requires ⅔ cup) and I always have the other ingredients on hand. Even better, no need to wait for the butter to soften as the fat is olive oil! It comes together quickly and is very pound-cake adjacent with a nice grassy, earthy flavor from the olive oil. It’s tender, rich, not too sweet, and one of those loaves you’ll keep coming back to for a slice, only to realize you’ve devoured a cake in an afternoon … or so I’ve heard.
