Sedalia is a town in the middle of Missouri, not a small town exactly at around 20,000 people but not a particularly big one either. It’s not too far from where I grew up in Quincy, Illinois geographically speaking–but also not close enough that I have had any reason to go there. It’s about an hour’s drive southwest of Colombia, where the University of Missouri–aka Mizzou–is located, so of course I partied with friends there and saw several concerts when I was a younger man; and it’s about an hour west of Jefferson City, the capital of Missouri, where I’ve been for various reasons a few times over the years. I asked my stepfather, who grew up in Missouri and has family around the state, if he’d been there much–he’s gone for the Missouri State Fair a few times but didn’t really get to know the city well. Of course I know about many of the regional foods of Missouri; the various St. Louis sandwiches–the St. Paul, the Gerber, the Hot Salami–as well as that city’s unique take on pizza;…
