Avocado Egg-in-a-Hole Toast with Tomato 0 ▲ Store-Bought Is Fine 1 hour ago · Food · hide · 0 comments Updated September 2026 Egg-in-a-hole goes by many names: bird-in-the-nest, the breakfast Olympia Dukakis makes for Cher in Moonstruck, or, as one follower’s son calls it, “good day eggs,” because you can’t have a bad day when you’ve had one for breakfast. That last one is obviously my favorite. This version combines that childhood classic with my unapologetically basic adult favorite: avocado toast. Crisp sourdough surrounds a runny egg, then gets topped with lemony avocado, a juicy salted tomato, balsamic vinegar, chives and red pepper flakes. The combination is crunchy, creamy, rich, acidic and just a little spicy. The trick that made it especially good was spreading butter on one side of the bread and mayonnaise on the other. You get the flavor of butter and the tangy, even browning of mayonnaise without the greasiness of using mayo on both sides.
