Who doesn’t love a snacking cake? My problem is not “snacking” on the whole cake in a single afternoon! Eric Kim closed out Korean American with this Whipped Cream Snacking Cake with Fresh Fruit – a moist, vanilla-scented sponge piled high with maple-macerated fruit and a cloud of whipped cream. While the fruit is flexible, I followed Eric’s lead with strawberries, peaches and kiwi, plus a plum I had lying around. The fruit and all its maple-sweetened juices are spooned directly over the cake, soaking into the sponge, topped with whipped cream and garnished with strawberries. It’s light, airy and the perfect way to use any lingering fruit in your kitchen. And adding this to my file of “improperly whipped cream” I always take it a little too far in the stand mixer, so I decided to whisk it by hand.
