Our friends Annie and Ron hosted a little brunch this past weekend, and I knew I wanted to make a dessert starring some delicious late-summer fruit. Ina Garten’s Summer Fruit Tart was just the answer! A spin on her classic French apple tart from Back to Basics, it’s simplicity at its best. A slightly sweet dough is rolled out into a rectangle, then topped with neat rows of peaches, figs and plums. After a sprinkle of sugar and a few dots of butter, it bakes until the crust is golden brown and the fruit is tender and juicy. A glossy apricot preserves glaze finishes it off. The flaky, buttery crust and mix of sweet and tart fruit were so delicious, and the simplicity of the tart really allowed the fruit to be the star. When I first made this recipe, the fig section was my favorite, but this time around, the plums won! One practical note: Even with the parchment paper, some of the fruit juices may run onto the sheet pan and burn. Don’t worry! An hour-long soak in the sink loosened…
