Dry Mead is not my Thing 0 ▲ David McGee 2 hours ago · Food · hide · 0 comments Mead doesn't have to be sweet. It often is, but it doesn't have to be. During fermentation, yeast consume the sugars and turn them into alcohol, so you can finish with a bone dry beverage. But, having made and drunk a number of meads, I've realized that I don't really like dry ones. I don't hate dry trad meads, some of them taste like lovely floral white wines. But, to me, they don't really taste like honey. By brain expects honey to be sweet, and they don't taste sweet. On occasion, my brain hallucinates that they're sweet because they taste like honey. But, more often, it concludes they don't taste like honey because they aren't sweet. And I want mead to taste a little bit like honey. They might remind me of a particular honey varietal -- a good orange blossom trad will have a real orange blossom note. But it still won't taste like orange blossom honey, at least not to my palate.
