As Brits, we largely think of no-frills budget airlines as a way of jetting ourselves off to sunnier places (or more accurately this year, just as blisteringly hot but with cheaper drinks) for our holidays, but are less likely to consider that those same routes might be bring curious and enterprising traffic the other way. Spain may be far and away the most popular destination for British holidaymakers but it's thanks to those airlines and their cavalier attitudes to geographical accuracy ("London" Southend, "Barcelona" Girona) that previously rather culinarily insular cities like Liverpool seemingly overnight found themselves host to fantastic delis like Lunya, where Iberico ham is carved to order and fridges groan with packs of sobrassada and boquerones. And it makes sense that where good ingredients go, and hospitality-trained labour can travel, good restaurants follow.
