And while all the work that went into those many, many layers was absolutely worth it, it’s definitely a cake I’ll only repeat for a VERY special occasion. So when I opened Samin Nosrat’s “Good Things” and saw she adapted those flavors into a much simpler Russian Honey Icebox Cake, it was immediately added to my summer must-make recipe list. Rather than the semi-tedious (for me) process of baking 12 impressively thin layers of cinnamon-honey sponge, Samin makes the genius swap of store-bought graham crackers. They are layered with a burnt honey dulce de leche cream, then refrigerated overnight. Don’t freeze it like I mistakenly did …, although after a thaw was just a delicious. Nothing will ever beat the original, but the effort-to-reward ratio makes this a version I’ll have on repeat. It captures everything I loved about the original while saving me hours of my life.
