I like eggs. I like all sort of eggs. Hard-boiled, sunny-side-up-ed, poached, fried, omelette-d, scrambled, salted, steamed, benedicted, soft-boiled, and even centuried. I used to dislike century eggs, but as I get older, I get to appreciate its taste and texture. Especially if it is in a bowl of pipping hot porridge. I believe eggs is a dish that really can’t go wrong. It will take an extraordinary effort to mess up cooking eggs. It is my comfort food, and even an amateurish cook like me can’t easily get it wrong. When I retire and have all the free time — don’t we all make this comment one way or the other, but I do hope I can really get the time, and energy and health — I’ll probably start a project to google some recipes and cook a different egg dish for maybe a month or two. That’s a promise. To myself. Not to you, dear readers. Like Apple, I don’t promise any future products here on this little corner of the platform. :-)
