2026/07/22 Wednesday Today I made stuffed eggplant, and it turned out pretty good :) On this cooking entry there won't be music, I'm still deciding if I will continue the playlist or start others... and I think I'm going to make a cooking index for recipes and entries where I made them... Anyway, I had two big-ass eggplants, one also big but a bit smaller, four tomatoes, and I grated some mozzarella to start. Then I scooped the eggplant insides with a spoon and chopped the contents into small chunks. As for the tomatoes, the trick is to remove the wet part, you just finger their holes until it squirts and leave them gaping, and then I also cut them into small pieces. Mixed all with the mozzarella, added cream cheese, and then seasoned with salt, chimichurri, paprika, and garlic powder. I brushed the hollow eggplant corpses with olive oil, paprika, and salt and then put the filling back... so, I was going to do this thing with eggs, but only when I reached this part I noticed I forgot…
