July is the beginning of glut season although this year things are a little slow, given the lack of rain. There are lots of onions and broad beans at the allotment and peas in the garden. I wanted to do some experiments with my standard glut recipes, adapting them to be gluten free. I decided to start with muffins. My usual recipe permits all sorts of flavour variations, including savoury cheese and onion and sweet muffins with all sorts of soft fruit, or dried fruit from the store cupboard. Basic recipe here So how to make these gluten free? First of all I tried a gluten free recipe book and adapted their recipe for my tastes. This seemed to work for the savoury muffins. Cheese, onion and walnut muffins 250g gluten free self-raising flour 2 tsp bicarbonate of soda 1/2 tsp xanthan gum (this recipe book was very keen on xanthan gum. I am not certain it is necessary) 55g butter or sunflower spread (butter is always nice but not necessary) 2 eggs 200g yoghurt 1 large or two small onions…
