These recipes require approximately 30 minutes of active time and are either already vegan or easily veganisable. They yield 4 to 6 portions and reheat well (I typically cook four portions for two, we eat leftovers the next night). Lentil and eggplant stew (90 minutes) Lentils are my winter MVP: they are a warm blanket made food. I use dry thyme, shaoxing wine and serve with greek yogurt and a slice of toasted sourdough bread. When eggplants are big and cheap, I usually use 500 or 700g for 4 portions. Their lentil, fennel and parmesan stoup, hits similar notes and works better in summer (barely warm stew, cold salsa).
