Sticks of eggplant are salted with a pinch of five-spice powder, drained, patted dry, and dredged in rice flour before being fried until crisp. They’re served over creamy, tangy labneh, drizzled with a sweet-sharp black vinegar syrup, then finished with a handful of cilantro and a dusting of cashews seasoned with five-spice powder and cayenne. It’s crispy, creamy, tangy, spicy, and exactly the kind of dish that makes me miss Win Son all over again.
