The Kale Salad That Dresses Itself – With Smoky Chicken and Avocado

What I love most about Kendra Vaculin’s Smoky Chicken and Avocado Kale Salad is that there’s no need to make a separate dressing! Ribbons of kale get massaged with avocado, lime juice, salt, and olive oil, which tenderizes the greens while coating them in just the right amount of fat and acid. From there, the kale gets piled onto a plate and topped with sliced roasted chicken that’s quickly marinated in chipotle chile and adobo, honey, cumin, and lime. Red onion wedges roast alongside the chicken, then everything gets finished with more sliced avocado and toasted pumpkin seeds with little hits of cumin. Talk about a satisfying salad.
