Simplicity.
My husband had some things going on at lunch time. He enjoys making lunch for me during the work week, and in his absence I lean toward grabbing a quick bite at one of the restaurants near the house. I especially do this when things are busy at work. And since taking the new career opportunity at the beginning of the year, things have definitely been busy at work. I’ve been making a conscious effort to simplify my life a little bit, purposely falling away from social media, deleting accounts whenever possible, etc. Another simplification is just going ahead and making my own lunch, something I’m very capable of doing. For the past year I have gone with having a standby meal when I’m not in the mood or of the energy to make another decision, however arbitrary a decision of what to eat for lunch may be. My fallback is tuna salad. When I was a kid, Grandma Country made the best ham salad ever and it was my favorite, but alas, as an adult I still lean toward tuna salad simply because it’s…
