I have eaten a lot of good food on my California adventure, but I have not done much cooking. When I arrived back at Jim and Steve’s last Saturday I was going on two weeks without cooking and was starting to go into withdrawal. Steve and Jim are both good chefs so they didn’t really need me to cook for them while I am here, but I convinced them to let me cook a few meals this week. I planned a menu for the week, taking into consideration the no-carb policy Steve and Jim strive for. I started on Sunday by showing them how to use their BB-8 Instant Pot to make pulled pork. We used sugar free BBQ sauce and I replaced the brown sugar in the spice rub with Truvia. For a side dish I found a recipe for Keto Coleslaw (its just a coleslaw recipe using an artificial sweetener instead of sugar). For this one I cheated and got some real brioche buns for the people who wanted carbs (they already had Keto buns in their pantry). As a bonus I got to eat pulled pork for lunch twice this week.…
