I have been trying to do more vegetarian and vegan meals lately, so I found a recipe from BudgetBytes and made it for dinner earlier this week. It came together really quickly and I served it over rice with garlic naan on the side. It even held up really well as a leftover for lunch the next day. I think I'll try to share more of my cooking and baking adventures here. Maybe it'll inspire me to plate things in a more photogenic way. Anyway, obviously this chickpea curry was really good because I am still thinking about it and considering doubling the recipe next time so I can store and freeze extra portions.
